Flexsource is seeking an experienced and passionate Senior Food & Beverage Manager for our Client in Cavan to lead and elevate the guest experience across all food and beverage outlets. This includes oversight of the Bar, Restaurant, Banquet Room, and Coffee Dock. You will bring strong leadership, a commitment to excellence, and a strategic mindset to drive team development, operational efficiency, and guest satisfaction, while contributing to the profitability and growth of the Food & Beverage department.

Key Responsibilities

Profitability & Financial Management

Schedule staff effectively based on business levels to control labor costs.

Manage departmental payroll costs.

Promote upselling and on-selling to maximize revenue opportunities.

Forecast weekly sales, labor, and overheads; investigate variances and take corrective action.

Service Quality & Guest Satisfaction

Respond promptly to guest feedback and follow up to ensure continuous improvement.

Uphold high service standards across all food and beverage areas.

Product Quality

Ensure all beverages meet the highest standards and follow company recipes and presentation guidelines.

Collaborate with the Head Chef to maintain exceptional food quality and presentation.

Ensure visual displays and materials are both functional and attractive.

Inventory & Procurement

Order beverages and coffee products through approved suppliers using relevant systems.

Coordinate monthly inventory counts with third-party stocktakers.

Ensure proper storage and temperature control of all beverage inventory.

Manage returns of kegs and glass bottles with suppliers.

Confirm deliveries and request credit notes as needed.

Track beverage waste and implement strategies to reduce loss.

Daily Operations & Administration

Oversee seamless daily operations across all food and beverage areas.

Ensure strict adherence to cash handling procedures and accurate till reconciliations.

Attend monthly management meetings and contribute to departmental strategy.

Work closely with Sales & Marketing on events, promotions, and new business opportunities.

Liaise with maintenance to ensure all facilities remain fully operational.

Ambience & Guest Experience

Maintain appropriate sound, lighting, and temperature to match business levels and enhance guest comfort.

Staff Performance & Development

Build and maintain a high-performing, team-oriented culture.

Recruit, train, and onboard new staff members effectively.

Coach and support staff during shifts to uphold service standards.

Identify gaps in SOPs and implement improvements.

Conduct post-shift debriefings and support ongoing training.

Ensure staff are knowledgeable about all menu items, wine selections, and cocktails.

Develop and manage training schedules based on performance needs.

Communication & Team Coordination

Communicate reservation and event requirements to ensure exceptional guest experiences.

Keep staff informed of any procedural updates or changes.

Represent the business professionally in all interactions with guests, suppliers, and colleagues.

Compliance & Safety

Ensure compliance with health and safety, food safety (HACCP), and hygiene standards.

Maintain adherence to all relevant legal regulations including licensing, employment, and public health.

Oversee the safety of staff, guests, and property at all times.

Follow established opening and closing procedures with precision.

Company Policies & Leadership

Adhere to and enforce all company policies and procedures.

Serve as a role model in professionalism and operational excellence.

Ensure all team members comply with the company’s employee handbook and standards.

Candidate Profile

Essential Qualifications & Experience

Proven track record in a senior food and beverage leadership role, ideally in a hotel or high-volume venue.

Excellent leadership, interpersonal, and communication skills.

Strong financial acumen in budgeting, payroll, and inventory control.

Organised, proactive, and solutions-focused.

Preferred Skills

Familiarity with inventory management software.

In-depth knowledge of wine, spirits, and cocktail service.

Experience implementing HACCP and maintaining high food safety standards.

Skilled in staff training and development.
